Wash the ginger and chop it finely without peeling. For each fresh ginger juice shot, you’ll need 1 inch of ginger and equivalent amounts of freshly squeezed lemon juice and coconut water. Add half a teaspoon of cayenne pepper to this. 

Blend until smooth then strain through a strainer. Ginger is quite fibrous so this is an important step to remove those stringy fibers from your fresh ginger juice! Use the back of a spoon to press down the ginger fibers accumulating in your strainer to squeeze out all the precious juice.

This drink is deliciously warming during winter and sweet and refreshing on a hot summer's day. As a fermented drink, homemade ginger beer does not only provides all the benefits of ginger juice but also has probiotic properties.

Unlike shop-bought ginger beer, this homemade version contains less sugar and no nasty preservatives or chemicals. This recipe requires fresh ginger root, lemon juice, cream of tartar, granulated cane sugar, active dry yeast, and good old H2O! 

To make this ginger beer, you will need a 2-liter plastic bottle, sterilized with boiling water so that the ginger beer is not contaminated during fermentation.

Start by washing, peeling, and grating fresh ginger until you have ⅓ cup’s worth. Place this ginger in a large pot along with ¼ cup of lemon juice, ½ teaspoon of cream of tartar, and 4 cups of filtered water. Bring the mixture to a boil, then turn it down the heat and let it simmer for ten minutes. 

Turn off the heat, add 1 cup of sugar, and stir until dissolved. Then add 5 more cups of cold filtered water and turn off the heat. Once the liquid in the pan has cooled to around 75°F, add 1 teaspoon of yeast and stir. Once the yeast has dissolved, place the pot in a warm dark place, such as an airing cupboard, and cover with a kitchen towel. 

After the mixture has been left for 3 hours to ferment, take it out and strain the liquid through a strainer, then pour into a clean 2-liter plastic bottle. Do not fill the bottle because the Co2 produced by the fermenting liquid will fill this space.

Put the bottle back in the dark warm space and leave for 2-3 days. Check on your ginger beer 3 times a day by loosening the cap temporarily to let out any pressure. If you do not do this, the pressure build-up can cause the bottle to explode!

As the ginger beer ferments, the sugar is metabolized by the yeast. The longer you leave it to brew, the less sugar it will contain and the drier your ginger beer will taste.

Yeast colonies will settle at the bottom of the bottle and on the top. You can spoon off the yeast on the top and decant your ginger beer slowly to stop the yeast at the bottom from getting in your drink. Serve your home-brewed non-alcoholic ginger beer with ice and a slice of lime and enjoy!
