Yes, the rind is edible and can be pickled or blended for fiber and nutrients, though it is less sweet and more fibrous. What we did was to add the rinds to our cold pressed juices. Waste not the goodness of watermelons!

Portion control is often a good rule of thumb, but best to seek consultation if you’re really nuts about watermelons. Oh, and skip added sugars if that’s the case. Watermelons are already sweet!
